This vegetarian option for people doing the 21 Day Fix or any of our Beachbody programs which include portion control containers is a great solution to get in enough vegetables. The sweet mixed with spiciness is great on the palette!

- 8 carrots (peeled & chopped)
- 2 small sweet potatoes (chopped)
- 1 onion diced & sautéed
- 2 cloves of garlic chopped
- 6 cups of vegetable broth
- 2 tbs raw honey
- 1 tbs curry powder
- 2 tbs fresh ginger or 1 tsp powdered ginger
- 1 tsp paprika
- 1 tsp cumin
- 1/4 tsp cayenne pepper (optional)
- 1 1/2 tsp salt (preferably pink himalayan)
Combine onion and garlic on medium heat in pot 2-3 minutes to release flavors. Add cooked carrots and sweet potatoes. Pour in broth. Add honey, curry, ginger, paprika, cumin, cayenne and salt. Use immersion blender or standard blender to combine. Heat for 30 minutes until warm. Makes 6 servings.
