Healthier Blueberry Crumble

Filling:
4 c Fresh or Frozen Blueberries (do not thaw if frozen)
1/2 c granulated stevia or pure cane sugar
2 tbs corn starch
2 tbs lemon juice
1/4 tsp salt

Topping:
3/4 c whole wheat flour
1/2 c oatmeal (we like steel-cut oats)
1/2 c brown sugar (or sweetener replacement)
1/2 tsp vanilla extract
1/2 tsp salt
1/2 ripe avocado
2 tbs butter (optional)

Directions:
Pre-heat oven to 375º. Spray 9″x9″ square baking pan with no-stick spray. Toss the berries with stevia, corn starch, lemon juice and salt. Transfer to baking dish.
Stir together flour, oats, brown sugar, vanilla and salt. Hand blend in avocado and butter to the other ingredients. Crumble over berry mixture. Bake 25-35 minutes until evenly brown and bubbly. Cool slightly before serving. Vanilla ice cream optional! Enjoy!
