INGREDIENTS
For the filling:
5 cups apples, peeled and chopped
1/2 cup Stevia sweetener
1 tsp cinnamon
1 Tbs flour
For the topping:
1 cup oats (steel cut or old-fashioned)
1/2 cup whole wheat flour
1/4 tsp baking powder
1/4 tsp baking soda
1/2 tsp cinnamon
1/2 ripe avocado, diced
1 tbs butter
1/3 cup Stevia sweetener
1/3 cup brown sugar
DIRECTIONS:
Combine together 1 tsp cinnamon, Stevia and flour and toss with chopped apples. Place in the bottom of a slow cooker.
Mix oats, flour, cinnamon, baking soda, baking powder, Stevia and brown sugar until combined. Using a pastry blender (or better yet, your hands!) mix in the avocado and butter until mixture is uniform and there are no large pieces of avocado. Evenly distribute over the apples. Cook on high 3-4 hours (low for 6 hours) or until apples are tender. To CRISP the top, slightly open the lid to let the steam escape during the last hour of cooking. Enjoy!
