Healthy Holiday Fruit Bake

INGREDIENTS:
2 cups sliced, peeled and cored apples (I used Honeycrip and Granny Smith) cut into 1 inch pieces.
2 green pears, peeled, cored and sliced
1 cup pineapple chunks (you must use fresh, PLEASE!)
1 1/2 cups fresh cranberries
1 tbs. lemon juice
1/3 cup stevia (or sugar, if you must)
1 tbs. honey
1 tsp cinnamon
1/4 tsp nutmeg
2 tbs coconut oil melted and cooled
1 tbs butter melted.
1/3 cup chopped walnuts

DIRECTIONS:
Toss all the chopped fruit and add lemon juice.

In a small microwavable bowl, melt butter, coconut oil and honey for about 30-60 seconds.  Mix in the stevia and spices.  Pour over the chopped fruit and toss to coat evenly.

Place mixture into a 9×13 glass baking dish.  Bake 45-60 min.  During the last 15 min of baking, sprinkle with the chopped walnuts and return to oven.

Serve warm alone or with ice cream (if you must!) 🙂
