A fantastic way to heat up your insides as it is colder outside. This soup defines the word “hearty” as it is wonderfully filling after a hard day of work.

- 1 sautéed onion
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 lb of chopped mushrooms (baby bella, cremini, button, or your choice!)
- 1/3 cup flour
- 1/3 cup white wine (dry)
- 6 cups turkey, chicken or vegetable broth
- 1 tsp fresh (or dried) chopped thyme
- 2 tsp fresh (or dried) chopped parsley
- 1 cup cooked brown rice (or 1/4 cup uncooked – adding 2 cups of broth)
- salt (prefer himalayan pink) and fresh ground pepper to taste
Sautée one onion. Place in large soup pot on medium heat with carrots, celery and mushrooms. Let veggies soften for a 5-7 min. Add flour and white wine, stirring to thicken. Add broth and spices. Let cook for 30 minutes on stove or 3-4 hours on low for a slow cooker. Salt and pepper to taste!
