Especially after Thanksgiving, this recipe is a FANTASTIC way to use that leftover turkey. It gives you a great excuse to make sure you incorporate all the key benefits of bone broth into your nutrition. SOO good! Hope you love it.

- 1 cup celery (chopped)
- 1 cup carrots (chopped)
- 1 sautéed onion (chopped)
- 3 tsp chopped garlic (or 3 cloves chopped)
- 1 tsp thyme
- 2 tsp sage
- 1 tbs parsley
- 1 bay leaf
- 2 cups of cooked turkey (or chicken) diced
- 8 cups of turkey broth (chicken or veggie optional)
- 1 cup uncooked quinoa
Start celery, carrots and onion in pot on medium heat for 2-3 minutes. Add garlic for an additional 1-2 minutes. Add spices, turkey, broth and quinoa. Let cook for 2-3 hours on medium low heat. Makes 8 servings.
