Everyone knows that when you add guacamole to any item at your favorite Mexican restaurant the uncharge is ridiculous! 2 bucks? $1.75? For a little cup? Crazy! Store bought will give you a bigger portion, but recently we were at Whole Foods and a small (like 4oz) container was over $5.00. Ridiculous! With avocados costing around a buck a piece, making your own guacamole is not only cheaper (one of my favorite words) but WAY HEALTHIER! Here is my (Lisa’s) very simple recipe!
HEALTHY & SIMPLE GUACAMOLE:
- 2 perfectly ripe avocados
- the juice from one lime
- salt
- taco seasoning (see recipe below)
- your favorite salsa
Remove the pit from the avocados and scrape the insides into a medium bowl. Mash with a fork. Add the lime juice. *Add about 1 tsp of the taco seasoning and about 1 tsp of salt. Mix in a generous tablespoon of your favorite salsa. You’re done!
I can not stress enough that you’ll need to TASTE your guacamole before serving. You might add a bit more salt, taco seasoning, lime juice or salsa. We just throw stuff in, so these measurements are estimates at best.
EASY, HOMEMADE TACO SEASONING:
I use this taco seasoning for chili, tacos, guacamole and a LOT more! I always make a quadruple batch and we always have it on hand! Try it and you’ll never buy a packet of that store bought stuff again!
- 1 TBS Chili powder
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp oregano
- ½ tsp paprika
- 1 ½ tsp cumin
- 1 tsp salt
- 1 tsp pepper
Blend all together and store in an airtight container.
To make your feast complete and a bit healthier, try making some baked tortilla chips.
HEALTHIER CORN CHIPS:
Take 5-6 CORN tortillas and spray both sides with olive oil spray. Sprinkle coarse sea salt on both sides of the tortillas. Stack the tortillas and cut into 8ths. Bake on a cookie sheet (I like to use a baking stone) for about 20 minutes at 375 or until toasted. They are AMAZING with the fresh guacamole! At our house, “Taco night” usually becomes “Chips and Guacamole” night, with the kids arguing at who got the most chips. You’ll never go back to bagged chips!
