Having vegetarian options has been critical in our family since one of our daughters would like to move more towards being vegetarian. We also have found that curry is a spice we have come to love over time. This particular recipe is great for people who may not be big fans of curry since the flavor is present but not overpowering. INGREDIENTS:
- 1 sweet potato peeled & chopped
- 1 larger apple of your choice (we love honey crisp)
- 1/2 onion chopped (sautéed optional)
- 2 cups cauliflower chopped
- 1 3/4 cup of vegetable & chicken stock
- 2 cans of chickpeas (garbanzo) drained
- 1 can diced tomatoes
- 2 tbs tomato paste
- 1/4 cup Curry Paste (Patak’s Mild or Hot)
- 2 tsp garlic chopped
- 2 tbs ginger
- 1 tsp garlic salt
- 1/2 cup lite coconut milk
- 1 1/2 cup raw spinach
DIRECTIONS:
Place all ingredients (except coconut milk and spinach) into your slow cooker. Cook on low for 6-8 hours or high for 3-4 hours. Add milk and spinach during last half hour (or any time after cooking). Allow spinach to wilt (30 min). Serve alone or over cooked rice/quinoa.
