INGREDIENTS:
• 1 onion, diced
• 1 large sweet potato peeled/diced
• 4 tsp minced garlic
• 2 tbs taco seasoning (see Lisa’s Super Simple Taco Seasoning)
• 2 cups broth (bone or veggie) (water is also okay)
• 2 cans black beans, rinsed
• 1 can kidney beans, drained
• 1 can fire-roasted tomatoes
• 3 tbs tomato paste
• 2 tsp pink Himalayan salt (or to taste)
• 1 bunch fresh cilantro, chopped (to taste) (optional)
• 1 tbs Plain greek yogurt (or sour cream) – (optional)
• 1/4 cup shredded cheddar cheese (optional)
DIRECTIONS:
Cook on HIGH for 3-5 hrs, LOW for 6-8 hrs or until sweet potatoes are tender. Top with optional cilantro, sour cream(Greek Yogurt) and cheddar cheese.
