When people think of sweet potato casserole, they think of tons of butter, sugar and marshmallows. I personally have never liked this famous side dish. It seems too much like a dessert to me! I LOVE sweet potatoes, so I thought I’d give it a go and try a healthier spin on this holiday tradition. We LOVE the result! It seems weird to have the apples on top, but it really works! I hope you’ll give it a try!

INGREDIENTS:
4 sweet potatoes, baked, peeled and cooled (I recommend the instant pot!)
1 egg beaten
1 tsp maple syrup
1 tsp ground ginger
1 tsp coarse salt
2 apples peeled, cored and chopped into 1 inch pieces (I used one honey crisp and one granny smith)
1 Tbs sugar
1 tbs butter
DIRECTIONS:
Whip the cooled sweet potatoes, add the syrup, ginger, egg, and salt and place the mixture into an oven proof dish.
Bake at 375º 20-30 minutes until it is set.
Toss the sugar and the apples and cook in 1 tbs butter about 10 minutes.
Top the sweet potatoes with the caramelized apples. Serve immediately.
