With all the hype around Starbuck’s new Unicorn Frappucino, there is also a whole lot of SUGAR involved in one – anywhere between 59-80g of sugar PER DRINK depending on the size you choose. Also, we have heard some questionable reports about the TASTE of this pink and blue mystery drink.
SO, we decided to put together not only a HEALTHIER version of this drink but also take it in a direction that ACTUALLY TASTES GOOD and keeps true to the wonder that is a UNICORN.🦄
Starbuck’s version is meant to have a creme, coffee and mango sort of flavor, mixed with a WHOLE lot of sweetness. We decided to go in a much different direction with more of a fruity base with some coconut goodness mixed in!
10 oz Almond Milk (unsweetened)
1 scoop (or packet) of Tropical Strawberry Vegan (or regular Strawberry) Shakeology
1/2 cup fresh (or frozen) mango slices
1/2 cup fresh (or frozen) blueberries
1/4 tsp ground cinnamon
3/4 cup of ice
For Whipped Topping:
1/2 cup canned organic coconut milk (Thai brand)
1/4 tsp vanilla extract
1 packet stevia sweetener
Refrigerate can of coconut milk overnight. Pour 1/2 cup into a metal mixing bowl with vanilla and stevia. Whip with hand mixer until frothy. Pour almond milk into blender, adding Shakeology, mango, blueberries, cinnamon and ice. Blend until desired consistency. Top with whipped topping. Optionally sprinkle the top of the whipped topping with additional stevia.
